Bread, Potato, and Arugula Soup

So, remember how I said before that my family didn't care so much for arugula? Right. However, I had a ton of it left over, and I thought maybe cooking it would tone down its strong flavor a bit.
I decided to look outside my cookbook for some arugula recipes.....
I found this one on Lidia Bastianich's website. I like watching "Lidia's Italy" on the public television "Create" channel (am I the only one in this century that doesn't have cable, dish, or direct tv??!) and I was looking foward to trying one of her recipes.
This recipe was simple and easy to prepare, and best of all, it used ingredients that I already had on hand (which was the goal)!! Double-score! The sprinkling of red pepper flakes gave this soup a nice kick without being too spicy.
