Snickerdoodles

I'm not sure I can think of a cookie more heavenly than snickerdoodles.  Growing up, we only made them at Christmastime, and so for so long, my mind associated this cinnamon-y cookie with the holidays.  However, they were my #1 craving during my last pregnancy and I fell deeply in love with them during the 9 months I spent eating them.  I love that they are my "fast and easy" cookie and they can be whipped up whenever the craving calls!

Snickerdoodles

1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 3/4 cup sifted flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
Cinnamon-Sugar Mixture
1/4 cup sugar
2 tsp. cinnamon

Directions:
Preheat oven to 400 degrees.  Mix butter, sugar, and eggs thoroughly.  Blend flour, cream of tartar, soda, and salt.  Stir into the butter mixture.  Shape dough in 1-inch balls.  Roll balls in cinnamon-sugar mixture.  Place 2 inches apart on ungreased baking sheet and bake 8-10 minutes.  Cool on baking sheet for several minutes before removing cookies to wire cooling rack.
